Ingredients:
- 100g (1 cup) almond meal
- 30g (1/4 cup) raw cacao powder
- 1 cup grated raw beetroot (skin on)
- 3 large eggs
- 125ml (1/2 cup) melted coconut oil
- 1 tsp gluten-free baking powder
- 1 vanilla pod, split and scraped (or a pinch of vanilla powder/dash of vanilla extract)
- 60ml (1/4 cup) honey
Equipment:
- Mixing bowl
- 23 x 23 cm baking tray
- Baking paper
Instructions:
- Preheat your oven to 180°C and line the baking tray with baking paper.
- Combine the almond meal and cacao powder in a large bowl until well mixed.
- Add the grated beetroot, eggs, melted coconut oil, baking powder, vanilla, and honey, stirring until a smooth batter forms.
- Pour the batter into the prepared tray and bake for around 20 minutes or until a skewer inserted into the centre comes out clean.
- Allow to cool slightly, then cut into 16 pieces and enjoy warm.
